We are so grateful for a successful trip once again…no severe issues that stranded us and thankful for Maggie the goat and MayC the beast who got us to our destination safely.
Now it’s time to let it all go and for us to do a few little honey do’s and mostly relax and have some fun. We’ve both decided it’s time to let go of our obsession with the media and politics, no matter what we do we will not be able to stop them from their opinions. We will continue to live our lives without all the trash that is spewing from just about everyone out there now and it’s destroying our peacefulness. It’s our time to let it all go and begin loving life once again and stay away from all the hoopla!
We noticed the temperature in Phoenix is still HOT, so we opted another 3 weeks up in Show Low, where the temperatures are hot in the day but in the 40’s at night…perfect for us.
There was an issue our second night with a transformer that our power went off for a few hours, it just got dark so we grabbed some wine and went out to the patio and enjoyed our fire pit, then we were a bit disappointed when the lights came back on because we have a bright street light next to us, but still enjoyed our outside time in the chilled air.
We are back to cooking again, neither of us did too much of that during our summer which we both missed. We also decided since our systems have changed throughout the years that we are going to eat much less beef and pork, going to stick with more chicken, seafood and fresh vegetables. We had a great salad the first night. Then we made Beef Stew…Been making this for years and each time it gets yummier…we even have leftovers…YEAH!
We BBQ’d chicken n roasted Brussel Sprouts…lots of garlic and a touch of bacon on the sprouts…so tasty!
Shrimp Soft Tacos n Pico de Gallo…Oh MY…this is a fantastic dish every time, all the freshness and the popping flavors of each additional item we layer on it makes it one of favorite meals…with enough leftover Pica de Gallo for a snack with tortilla chips later.
We made Scalloped Potatoes with Ground Turkey, Peas and Bacon and it was scrumptious. Not sure about the texture of ground turkey, but that is all we used to eat many years ago, the taste is great. We love the texture in the turkey burgers, but the ground turkey meat is mushy. We will get this all figured out.
We have a fantastic experience coming up tomorrow that we will write about in our next blog, hope you all are being safe out there and enjoying life to the fullest.
